Why don't Jains eat onions, garlic or potatoes?

It's about harm, not purity. Root vegetables and bulbs are classed as 'ananta-kaya', or infinite-bodied: Jain biology holds that they host countless tiny lives. Pulling one up also kills the whole plant, whereas picking a fruit, leaf or grain leaves the plant alive. So avoiding them is ahimsa applied to the smallest scale. Not every Jain follows it strictly. Many do, many relax it, and it's common for Jain families to be strict during festivals like Paryushan and more flexible otherwise. You'll also hear secondary reasons, like onions and garlic being thought to stimulate passions, but the core reason is minimising harm.
